Resolution: buy more local produce]
Now you know where the
recipe for Northumbrian broth comes from.
Lamb from the Northumbrian hills, barley, potatoes, swede and of
course leeks are all plentiful.
The winter veg is all there including: carrots, parsnips, winter
greens, late broccoli and sprouts.
Game is in season -
including both venison and pheasant.
Not to mention great Northumbrian cheeses, ham, bacon, sausages -
and conserves and chutneys from last summer.
Shellfish are in season in winter - both crab, langoustine and the
occasional lobster can sometimes be found at Alnwick and Berwick
markets - rather than being frozen & shipped out to the
continent. And Holy Island mussels are a must! |
